(ouch!) Regarding the content of the discs: Off the top-of-my-head Star Wars has only about 10 minutes (if that) extra music than the 4CD set. But you do get the 5 raw takes of the Main Title -- interesting stuff indeed. ESB has about 20 minutes of unreleased stuff. Jedi has the most -- around 50 minutes of unreleased stuff. Including the new Jedi Rocks song and the new Victory Celebration. In my opinion, if money is tight, probably get them in reverse order, ie. Jedi, ESB then Star Wars. The sound quality is superior to that of the 4CD set but some ESB cues have been re-mixed (God knows why). The first one and I'm pretty sure the second one got printed in collected editions which should still be available. However, I'd reccomend giving it a miss. Mostly it's voice acting, doing voices for several cartoon characters in various cartoon's, some voice acting for a computer game or two I think, and some other stuff. That's just it they had the chance to re-do the wampa scene from scratch since the scenes with the wampa did not include Luke for extended scenes. All they did in that situation was edit in new shots of the Wampa. In the case of the Rancor the whole sequence would have tobe redone and that would be very hard to accomplish to have it still fit into the film. To reshoot it would be impossible since Hamil is noticably older, using old footage is also impossible since it's been too long. A CGI rancor would look good but how would you redo the Luke overlay ? If they did the same thing as the Wampa scene (ie. shooting new scenes and editing them in) that would be too noticabl since most/all of the scenes are superimposed/bluescreen shots of both the Rancor and Luke.
