I've frozen tomatoes without blanching though, and they turn out good for recipes calling for cooked tomatoes. I've just skinned them and put into pint containers. Also I freeze most of the excess tomatoes as sauce. I have a strainer thingie that takes the skin and seeds out and just leaves the tomatoes pulp. Then I cook that down. It's great for spaghetti and other recipes calling for tomato sauce. Broccoli freezes real well. I usually blanch that in the microwave a little bit at a time, pretty easy. You mentioned drying jerky, did it turn out good? I'm curious about that but have never tried. I've dried onions and leeks. They dry real well. Or maybe I'm just having Fido mail woes and you've been here all along. I know how she feels about canning. The rules get more stringent every year. It can be scary to read about. I like frozen veggies better than canned ones anyway so never have tried canning. I do make pickles sometimes, and things like marmalade, but have never tried 'real canning'. One problem I have here in Florida, besides following the canning rules, is finding a storage space. We don't have cool basements or any basements. Anywhere I could store it is way too hot. So I stick to freezing and drying. My mother did a lot of canning, but we lived up north then and had a good cool basement to store those jars in. Anyway, glad to see you back. Marilyn ... Is it the butterflies feasting on yout broccoli and kale, or are they laying eggs and it's the caterpillers feasting. It sounds like cabbage worms possibly. The butterfly for them is white. The best treatment for the caterpillers is Bacillus Thuringiensis. You should be able to find it at your garden center. It's a bacteria that gives the worms a stomach ache, they stop eating then they die. It's not harmful to people so you can use it right up to harvest. You can get it in either a dust or a liquid that you mix up and spray. It's considered organic. Marilyn ... Now I have to remember to add lemon juice, cut up the tomatoes, and let them go more like 50+ minutes. Last week I did up a canner load and forgot the lemon juice. I ended up dumping the batch. I've seen the green caterpillers I think you're referring to, but there aren't nearly the number of them relative to the number of butterflies. So I'm not sure anymore. :-) I think I'm eating the kale faster than they are now and the broccoli is almost finished, so I probably won't invest $ in a solution anymore this season. But next year...!!! In my experience, ladybugs tend to disappear pretty fast. Same with mantids. Besides they don't really eat enough of the nasty creatures to bother, tho' every little bit counts!! What I really like in my garden are toads!
