I had a wonderful one several years ago but it seems to have gotten lost in the last house move. Also, if you have any other 'chocolate covered' bars or cookie recipes, would love to see them too. COOKING Ref: F3300011Date: 02/26/98 From: RUTH HANSCHKA Time: 12:01am \/To: ALL (Read 1 times) Subj: dried apple pie [CR] Dried Apple Pie [From http://soar.berkeley.edu/recipes - collection of RHommel] Double-Crust pastry dough [I used the old Crisco recipe - 1 cup shortening cut into 2 2/3 cup flour, a scant teaspoon salt, and up to 6 TB ice water. Blend thoroughly with a pastry cutter. This makes a seriously flaky crust.] 3/4 pound dried apples 4 cups apple cider 1/4 cup plus 1TB sugar 3 TB cornstarch 1/2 tsp cinnamon 1/4 tsp freshly grated nutmeg 2 TB Cold unsalted butter, cut into bits 1 TB Cold Milk 1 to 3 TB heavy cream, optional Divide the dough into 2 slightly unequal portions, roll the larger portion into a round 1/8 inch thick, and fit it into a 9 inch pie plate. Roll the remaining dough into a round 1/8 inch thick and transfer it to a foil-lined baking sheet. Chill the pastry. [I didn't bother - didn't have the time] In a kettle combine the apples and cider, adding water [I used extra cider] if necessary to just cover the apples, bring the cider to a boil, and simmer the apples, covered partially, stirring occasionally, for 20 to 30 minutes, or until they are softened but not mushy. Drain the apples, reserving 1/4 cup of the cider, and let them cool. [Pour the rest of the cider in mugs and drink it hot - yum] Into a bowl, sift together 1/4 cup of the sugar, cornstarch, cinnamon, and nutmeg. Add the apples and toss the mixture. Add the reserved cider and toss the mixture until it is combined well. Spoon the apple mixture into the shell and dot it with the butter. Lay the remaining pastry loosely over the filling and crimp the edges together decoratively. Brush the pastry lightly with the milk, sprinkle it with remaining 1 TB sugar, and cut several long steam vents in the crust. Bake the pie on a baking sheet in the lower third of a preheated 425F oven for 15 minutes, reduce the heat to 400F and bake the pie for 30 minutes more. For an old-fashioned pour-through pie, drizzle the cream into the steam vents 5 minutes before the pie is finished baking. Serve the pie warm with ice cream or sharp Cheddar as an accompaniment. This pie is a homespun American favorite. The pour-through crust is an old farm tradition. [Ruth's note: This looks like a breakfast pie, or what would traditionally have been one here in New England. A side benefit of the dried apples is that the bottom crust on my pie stayed un-soggy, much to my surprise. The apples also didn't cook down at all. ] --- Maximus 2.02 * Origin: A Bit Of Light In Your Night 860/290-8578 10p-8a Only (1:142/578) --------------- FIDO MESSAGE AREA==> TOPIC: 190 INTER.
