Cover and let stand in a cool place for 12 hours. Pour into medium saucepan and bring to a full, rolling boil over high heat. Cook for about 15 minutes, stirring frequently. Remove from heat and stir in lemon and Grand Marnier. Measure this mixture and add equal amount of sugar. Again bring to a boil and cook, stirring frequently, for about 30 minutes. When mixture begins to gel, remove from heat and immediately pour into hot sterilized jars. Vacuum seal. Makes 6 1/2 pint jars. MMMMM MMMMM----- Recipe via Meal-Master Title: Kumquat Chicken Categories: Poultry Yield: 6 Servings 4 oz Neufchatel cheese, softened 3/4 ts Dried whole tarragon, divide 8 Chicken breasts 1 Egg white 1/4 c Water, divided 1/3 c Fine, dry breadcrumbs 2 tb Toasted wheat germ 1 1/2 c Unsweetened orange juice 1 tb Sugar 1 Clove garlic, halved 1 ts Cornstarch 2 tb White wine vinegar 1 1/2 tb Orange-flavored liqueur 1 1/2 c Sliced kumquats divided Bone, cut in half, and skin the chicken breasts. Note: It will take about 20 kumquats to make 1 1/2 cups. Combine cheese & 1/2 tsp tarragon; set aside. Flatten chicken to 1/4 inch thickness; spread cheese mixture evenly on each piece of chicken; roll up, tuck in sides; pick. Combine egg & 2 Tbsp water in a small bowl; stir. Combine breadcrumbs & wheat germ in a shallow dish. Dip each roll in egg white mix; dredge in bread crumb mix. Place in a 12x8x2 inch baking dish coated with cooking spray. Bake at 400 for 30 min. Set aside; keep warm. Combine juice, sugar, and garlic in a small saucepan; boil. Cook 6 minutes or until reduced to 1 cup. Combine 2 Tbsp water & cornstarch; stir. Add to juice mix, stir. Add 1/4 tsp tarragon, vinegar, liqueur & 1 cup kumquats; simmer 5-min or until kumquats are tender, stirring constantly, remove & discard garlic. Remove wood picks & serve with sauce. Slice kumquats lengthwise and remove seeds. Place in large heavy pan with sugars and water. Mix well and simmer slowly, uncovered, 30 minutes. Add vinegar, raisins, rhubarb, celery, onion, bell pepper, garlic, citron, orange juice and peel, gingerroot, Worcestershire, salt, curry powder, allspice and cinnamon. Mix well. Simmer slowly, uncovered, until mixture is dark in color, about 4 to 5 hours, stirring occasionally. Taste and add ground ginger and pepper, if needed. Pour into hot sterilized jars and seal immediately. If you want to double or triple the recipe and cook it in a larger crock pot, make sure the pot is half full. In 1-quart Crock-Ette crock pot, combine all ingredients. Cover and cook on LOW for 8 to 9 hours. Cool; serve as an accompaniment to pork or chicken. Yield: about 2 cups One tbs contains: 44 cal., 0 prot.,12 g carb.,0 fat, 0 chol., 5 mg sodium. Boil beans for 2 minutes; turn heat off, cover beans and let sit for 1 hours. Add the following ingredients: 1 or 2 bell peppers, chopped l large onion, chopped 4 cloves garlic, minced 1/2 tsp pepper salt or to taste 1 tsp oregano 1 bay leaf 2 tbsp sugar Cook at 15 lbs pressure for 25 to 30 min. Open cooker when the indicator has dropped down. Remove about 1/2 to 1 cup of the beans and mash; return to pot and add the following ingredients: 2 tbsp vinegar 2 tbsp red wine (cooking wine ok) Bring to a boil and simmer for about 20 min. Serve over white rice. It's a long way from the original. This makes approx. 5 qts., enough to freeze half or feed a crowd. Put the water in the cooker, turn burner to high. Stir in spices. Rinse rices and put in cooker. Throw in black-eyed peas, greens, and stewed tomatoes. Bring to simmer with the top off, stirring occasionally, until frozen stuff has thawed somewhat and greens are separated. Lock the lid down, bring to high pressure. Cook at high pressure for 30 minutes, remove from heat and allow natural pressure release. Adjust seasoning if necessary. The cooking procedure is believed to be the other half of the secret. Colonel Sanders became famous for using a pressure cooker shortly after its invention in 1939." Pour the oil into a pressure cooker and heat over medium heat to about 400 degrees. In a small bowl, combine the egg and milk. In a separate bowl, combine the remaining four dry ingredients. Dip each piece of chicken into the milk until fully moistened. Roll the moistened chicken in the flour mixture until completely coated. In groups of four or five, drop the covered chicken pieces into the oil and lock the lid in place. When steam begins shooting through the pressure release, set the timer for 10 minutes. After 10 minutes, release the pressure and remove the chicken to paper towels or a metal rack to drain. Repeat with the remaining chicken.
