Line roasting pan with foil. Then cover the foil with a thick layer of salt. Sprinkle chicken cavity with thyme. Stuff with whole lemon. Place chicken, breast side down, on top of salt. Cover all exposed surfaces completely with remaining salt. Sprinkle with water to seal and place in oven. Bake uncovered about 1 hour. Remove chicken from oven. Let sit for 10 minutes, then break crust. Remove all of salt, wiping with a paper towel, if necessary. Cut into pieces. Makes 4 servings. Do not stir. Let stand 10 minutes or until the surface becomes bubbly. In large bowl, combine flour and table salt. Make a well in the center. Pour in yeast mixture and 1 tablespoon olive oil. Stir with wooden spoon or electric mixer, and slowly add remaining 1/4 cup water. Dough will be soft and slightly sticky. Turn dough onto lightly floured surface. Knead for 10 minutes, adding small spoonfuls of flour if necessary. Place in bowl and cover with plastic wrap or damp cloth. Let rise in warm place about 80-85 degrees until doubled for 1 hour. Turn onto lightly floured surface. Knead gently several times. Flatten to 10-inch circle. Place on oiled baking stone, pizza pan or heavy cookie sheet. Press indentation with fingers to make "dimples." Loosely cover and let rise about 15 min., or until doubled in size. Preheat oven to 425 F. In a blender or mortar and pestle, combine remaining 3 TBs olive oil and herbs until leaves are broken up and oil is fragrant. Pour over dough. Rub gently into surface. Sprinkle with kosher salt. Spray large, heavy nonstick roasting pan with olive oil cooking spray. Add root vegeta- bles, vinegar, 2 Tsp tarragon, 1/2 teaspoon thyme, garlic, salt and peppers; toss to coat. Bake until vegetables begin to caramelize, about 30 to 45 minutes. Add green beans and bake until vegetables are tender, about 10 to 15 minutes longer. Remove vegetables to a large bowl; cover to keep warm. Add wine to pan, scraping brown bits off the bottom. Add chicken; bake until throughly cooked, about 15 to 20 minutes. Add to vegetables; cover again. Place roasting pan on top of range. Add broth; bring to a simmer. Mix Hour with 1/2 cup water, stirring until smooth; add to pan. Make a well in the centre and pour in the egg, milk, orange juice and oil. Stir just enough to moisten. Pour into a 9" square pan (I used a 9" round pan, which worked perfectly). Sprinkle the well mixed streusel ingredients, evenly over the top. Bake in a 350F oven for about 30 mins. This coffee cake was wonderful and only lasted for 1 day in our house! Scoop out centers. Dissolve 1 cup salt in 4 quarts cold water; pour over vegetable shells and tops; let stand 24 hours in a cool place. Drain; rinse and drain thoroughly. Combine cabbage, 1 tsp. salt and pepper and mustard seed; press into shells. Replace tops and fasten with toothpicks or sew with coarse thread. Pack into hot Ball jars, leaving 1/8 inch head space. Combine vinegar, water and sugar. Bring to boiling and pour boiling hot, over peppers, leaving 1/8 inch head space. Adjust caps. Process 15 minutes in boiling water bath. Yield: About 3 quarts.
