In a small saucepan, bring 1-1/2 cups water to a boil and add corn. Reduce heat and let corn simmer until tender. Drain corn, reserving : 1 cup of cooking liquid. Bring cooking liquid to a boil and add quinoa and cumin. Cover, reducing heat, and let simmer until liquid is absorbed (about 10 minutes). Remove pan from heat and leave undisturbed for 5 minutes. Fluff quinoa with a fork and allow to cool slightly. In a bowl, combine cooled quinoa, corn, black beans, tomato and onion. Pour dressing over and toss gently to mix. Add tomatoes, beans, water and grain. Season with herbs and spices of your choice. Cook until the grain is tender. Serve with tossed salad. Categories: Cakes, Desserts, Dkuhnen msn Yield: 8 Servings 19 oz Can chick-peas, drained and Rinsed Finely grated rind of 1 Lemon Juice of 1 lemon 4 Eggs, at room temperature 1 c Granulated sugar 1/2 t Baking powder Icing sugar In food processor, process chick-peas with lemon rind and 2 tablespoons juice until very smooth. Add eggs, sugar and baking powder; process a few seconds until ingredients are well blended. Pour into greased 9-inch springform cake pan. Bake in preheated 350f oven about 45 minutes or until cake tester inserted into centre comes out clean. Cool about 15 minutes in pan; remove sides of pan. To make muffins, cream together brown sugar, butter, egg, vanilla and almond extract until light and fluffy. In separate bowl, stir together flour, baking powder and baking soda. Add to sugar mixture alternately with buttermilk, stirring just until dry ingredients are moistened. Do not overmix. Batter should be lumpy and tends to be thick. Fold in Rhubarb. Divide among 12 large muffin cups (paper-lined), filling until full. Sprinkle each generously with topping mixture.
