Cook Time: Cholesterol per serving: Marks: INGREDIENTS ------------------------------------------------------------ 1 stick unsalted butter 5 lg eggs 1/2 cup milk 1 tsp pure vanilla extract 3 1/2 cup flour, sifted before measuring 2 Tbsp baking powder 3/4 cup sugar 1/2 tsp salt 4 1/2 lg bananas, sliced 1/2 cup chopped walnuts 1/2 cup coconut DIRECTIONS ------------------------------------------------------------ Coat 12 muffin pan with 2 tablespoons of butter. In a small saucepan over medium heat, melt the remaining butter. In a mixing bowl, beat the eggs until well blended, then stir in the melted butter and milk; add vanilla. In a separated large mixing bowl, stir together the flour, baking powder, sugar and salt. Add the egg mixture and stir just until well blended without overmixing to prevent the muffins from becoming tough. Fold in the sliced bananas, walnuts and coconut. Cover the bowl with plastic wrap and place in refrigerator for 2 hours. Preheat the oven 30 minutes before removing bowl from refrigerator. Spoon the batter into muffin molds above the rim about 1/4 inch (batter will be fir enough not to spread out over the mold.) Place mold in the middle oven and bake for 25 to 30 minutes until the tops are golden brown. Serve warm. Makes 12 muffins. Cook Time: Cholesterol per serving: Marks: INGREDIENTS ------------------------------------------------------------ 1 2/3 cup all-purpose flour 1 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1 tsp ground cinnamon 1/2 tsp ground allspice 1 cup Libby's Solid pack Pumpkin 1/4 cup undiluted Carnation Evaporated Milk 1/3 cup shortening 1 cup packed light brown sugar 1 cup blueberries 1 egg 1 Tbsp all purpose flour Steusel Topping (Recipe Follows) DIRECTIONS ------------------------------------------------------------ In large bowl, combine 1 2/3 cups flour, baking soda, baking powder, salt, cinnamon, and allspice; set aside. In small bowl, blended pumpkin and evaporated milk. In large mixer bowl, cream shortening and sugar. Add egg; beat until fluffy. Alternately add flour and pumpkin mixtures to shortening mixture; beat well after each addition. Combine blueberries and 1 tablespoon flour. Gently stir into batter. Spoon batter into 18 greased or lined muffin cups, filling 3/4 full. Sprinkle Streusel Topping over muffins. Bake in preheated 350 oven for 35 to 40 minutes or until toothpick comes out clean. Cool 3 to 4 minutes. Remove from pan; cool on wire rack. Streusel Topping: In small bowl, combine 2 tablespoons all-purpose flour, 2 tablespoons granulated sugar, and 1/4 teaspoon ground cinnamon.
