Cook Time: Cholesterol per serving: 61 Marks: INGREDIENTS ------------------------------------------------------------ 1 1/2 lb Boneless Beef Shoulders London Broil (1 1/2in) trimmed of visible fat 1 1/2 tsp vegetable oil ---Barbecue Basting Sauce--- 3 Tbsp hoisin sauce 1 1/2 tsp molasses 1 1/2 tsp prepared mustard 1 1/2 tsp cider vinager 1/2 tsp garlic powder 1/4 cup chile sauce DIRECTIONS ------------------------------------------------------------ Sauce: In small bowl, combine all ingredients. Prepare outdoor grill for barbecue or preheat stove-top grill pan. Brush London broil with oil; place on grill rack 4 to 6 inch above medium hot coals or directly on grill pan. Sear steak 5 minutes or until browned all over, turning with tongs frequently. Brush steak with sauce. Grill 20 to 25 for rare to medium doneness, turning and basting with sauce frequently. Remove from heat; let stand 10 minutes. Cook and stir over low heat until mixture thickens slightly and coats the back of a spoon. Cool to room temperature. Puree bananas in blender ( 1 cup). Combine cooled custard, bananas, vanilla, salt and nutmeg. Pour into freezer container. Cook Time: Cholesterol per serving: Marks: INGREDIENTS ------------------------------------------------------------ 4 oz Unsweetened chocolate 1 cup Heavy or whipping cream 1 cup Milk 1 tsp Vanilla 2 lg Eggs 1 pn Salt 1 cup Sugar DIRECTIONS ------------------------------------------------------------ Ben's Chocolate Ice Cream is about as rich as they come. The pinch of salt helps to bring out the chocolate flavor. Melt the unsweetened chocolate in the top of a double boiler over hot, not boiling water. Gradually whisk in the milk and heat, stirring constantly, until smooth. Remove from the heat and let cool. Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes. Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Add the cream, vanilla and salt and whisk to blend. Pour the chocolate mixture into the cream mixture and blend. Cover and refrigerate until cold, about 1-3 hours, depending on your refrigerator. Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions. Makes 1 generous quart.
