Preheat oven to 350 degrees F. 2. For the topping, combine sugar, flour, oats, cinnamon and nutmeg in a medium mixing bowl; mix well. Cut in butter to make a crumbly mixture. Set aside. 3. For the batter, combine flour, sugar, baking powder and salt in a large mixing bowl. 4. Cut in butter until mixture resembles coarse crumbs. Add eggs and milk; mix just until dry ingredients are moistened. Do not overmix; batter will be lumpy. 5. Spread half the batter into a lightly greased 13 x 9 x 2-inch baking pan. Spoon cherry filling evenly over batter. Top with remaining batter. Sprinkle reserved topping over batter. 6. Bake in preheated 350 degree oven 30 to 35 minutes, or until golden brown. Serve warm. Preheat oven to 400 degrees F. 2. Cut cherries in halves. Set aside. 3. In large mixing bowl, combine oats and buttermilk; mix well. Let stand 1 hour. 4. In another mixing bowl, combine egg, brown sugar and shortening. Add egg mixture to oats mixture. Mix with an electric mixer on low speed 30 seconds; scrape sides of bowl. 5. Combine flour, baking powder and salt. Add flour mixture to oats mixture; mix until ingredients are moistened. Fold in cherries with a spoon or rubber spatula. 6. Fill 12 greased muffin cups two-thirds full. Bake in a preheated 400 degree F. oven 15 to 20 minutes. *Note: 1 cup canned tart cherries, well drained and halved, or 1 cup chopped dried cherries may be substituted for 1 cup individually quick frozen tart cherries. Preheat oven to 400 degrees F. 2. In medium bowl pour boiling water over cranberries and raisins. Let rest approximately 15 minutes to soften. 3. In large bowl combine the flour and baking powder. 4. In small bowl beat the eggs, milk and butter. 5. Pour liquid into dry ingredients and mix to moisten batter. 6. Drain and dry softened cranberries and raisins. 7. Fold cranberries and raisins into batter. 8. Spoon batter into greased muffin cups. 9. Bake for 20 to 25 minutes and serve sweet and sour muffins warm. Variation: For additional tang, add 1 teaspoon of grated orange or lemon rind to batter in step 3. In large bowl combine flour and milk. Stir well. 2. Add eggs one at a time, beating with a fork after each. Set batter aside until step 6. 3. Preheat oven to 425 degrees. 4. Place butter in a 13 x 9-inch pan and melt in oven as it is preheating. Remove from oven. 5. With a brush, spread a small amount of melted butter on bottom and up sides of pan to create a non-stick surface. 6. Pour entire batter into pan. 7. Return pan to oven and bake 15 to 20 minutes. Pancake will rise on walls of pan. 8. Cut into equal portions and serve this magnificent Dutch pancake hot! Serve with suggested toppings.
