--------------- FIDO MESSAGE AREA==> TOPIC: 189 COOKING Ref: FA100092 Date: 05/20/98 From: GAIL SHIPP Time: 10:48am \/To: ALL (Read 0 times) Subj: Strawberry/lime CR MMMMM----- Recipe via Meal-Master (tm) v8.04 Title: Strawberry-Lime Squares Categories: Desserts, Low fat Yield: 9 Servings MMMMM---------------------------CRUST-------------------------------- 2/3 c Graham cracker crumbs 2 tb Honey MMMMM--------------------------FILLING------------------------------- 16 oz FF Cream Cheese, softened 1 1/2 c Powdered sugar 2 ts Grated lime peel 8 oz FF frozen whipped topping -thawed MMMMM--------------------------TOPPING------------------------------- 3/4 c Sugar 1 tb Cornstarch 3/4 c Fresh lime juice 4 c Fresh ripe strawberries, -quartered lengthwise Preheat oven to 375 degrees F. Spray 8 inch square (2 quart) baking dish with nonstick cooking spray. In food processor bowl, combine graham cracker crumbs and honey, mix until crumbly and well blended. Press in bottom of prepared baking pan. Bake at 375 degrees for 10 minutes OR until set. Cool 15 minutes or until completely cooled. In large bowl, beat cream cheese until smooth, add powdered sugar and lime peel, mix well. Gently fold in the whipped topping. Spread over the cooled crust. Freeze at least two hours or overnight before serving. In a small saucepan, combine sugar and cornstarch, mixing well, add lime juice and cook over medium heat until mixture is bubbly and thickened. Cool 10 minutes. Stir in the sliced strawberries. To serve, cut dessert into nine squares, place on individual dessert plates. Top each square with strawberry mixture just before serving. In medium bowl, combine strawberry puree and remaining strawberries, stirring gently to mix. Refrigerate until ready to serve In small bowl, combine sour cream, powdered sugar, lemon peel and lemon juice, blend well. Refrigerate until serving time. To serve, spoon about 1/2 cup berry mixture into each of 8 dessert dishes, spoon two tablespoons of lemon cream over top of each. In medium bowl, combine this puree with remaining strawberries, mixing gently. To serve, spoon strawberry mixture into six individual desserts dishes.
