Turns out one of the better recipes I saw was posted by you:-}} Anyhow, here are two more to add to your collection. MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Traditional Hopping John Categories: Southern, Holiday, Rice, Pork Yield: 10 servings 4 Bacon strips 1/4 c Onion, diced 1/2 Bell pepper, diced 1/2 Red bell pepper, diced 2 c FRESH Blackeyed peas -or purple hull peas -OR- 2 pk (10 oz) frozen blackeyed -peas 1/2 c Uncooked white rice 2 c Water Salt & pepper, to taste Louisiana Hot Sauce Dice bacon. brown in dutch oven with onion and pepeprs, until bacon is crisp and vegetables are soft. Add peas and rice. then water. Cover and simmer over very low heat about 20 minutes, until the rice is tender. Salt & pepper to taste. Add a dash of hot sauce (to taste). This recipe came to America from Africa though the slave trade. It is now the traditional dish served by most Southerners on New Year's Day. It is reported to bring good luck. Recipe fron the collection of Joan Mershon From: Joan Mershon ~-- MMMMM MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: 580476 Hoppin' Jack Squares Categories: Rice, Main dish Yield: 1 servings 1/2 c Chopped green pepper 1 tb Chopped onion 2 tb Butter 2 tb Flour 1 ts Chili powder 1/2 ts Ground cumin 1 1/4 c Milk 1 1/2 c Shredded cheddar cheese 1 (15 oz.) can black eyed -peas, drained 1 c Cooked brown rice 3/4 c Diced, cooked ham 2 Beaten eggs Cook pepper and onion in butter until tender; stir in flour, chili powder and cumin. Stir in milk; cook and stir until bubbly. Remove from heat and stir in 3/4 cup of cheese. Stir in remaining ingredients. Pour into a well greased 8"x8"x2" baking dish. It is hearty, and could be vegetarian (as in this recipe) or could have meat in the way of ham chunks, chicken broth etc used with it. Also, if you make your own vegetable broths, they could be used instead of the Knorr vegetable broth cube that we use. MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Many Bean Stew Categories: Stew, Beans, Vegetarian, Boat & menu, D/g Yield: 6 servings 1 Onion; chopped 1 tb Oil 2 Cloves garlic; chopped 1 1/2 ts Paprika 1/2 c Pinto beans 1/2 c Northern beans 1/2 c Kidney beans 1/2 c Red lentils 5 c Water 1 Bay leaf 1 ts Celery seed 1 ts Dill weed 2 ts Salt 1/4 ts Black pepper 1 Knorr Vegetarian Bol. Cube 2 c Potatoes; cubed with 1/2 c Carrots; etc. your choice Rinse beans, cover with water and bring to a boil, let boil two minutes. Remove from the heat, cover and let stand for one hour. Drain off that water. Saute onion, garlic in oil along with paprika. Put all ingredients in slow cooker, and simmer on high for about 4 hours. MMMMM ... BLACK BEAN SWEET POTATO CHILI 2 t olive oil 1 medium onion, peeled and finely chopped 2 medium garlic cloves, peeled and minced 2 medium red bell peppers (or 1 red and 1 green), stemmed, seeded, chopped 1 medium jalapeno pepper, seeded and minced 1 11.5 ounce can low sodium tomato juice (about 1-1/2 cups), divided 1 T chili powder 1 t ground cumin 1/4 t ground cayenne pepper 1/2 t salt 1 14-1/2 ounce can low-sodium peeled and diced tomatoes, undrained 1 c vegetable or low-sodium chicken broth 1 large sweet potato, peeled and diced into 1/2-inch cubes 1 15-ounce can low-sodium black beans, drained, rinsed, drained again In a large pot, heat the oil over medium-low heat. add the onion and a couple of tablespoons of water. Cover and cook 5 minutes, stirring occasionally. Add the garlic, bell peppers, and jalapeno with 1/4 cup of tomato juice. Cover and cook 5 minutes, stirring occasionally. Stir in the chili powder, cumin, cayenne, and salt. Stir one minute. Add remaining tomato juice, tomatoes, broth, and sweet potatoes. Bring to a boil, cover and reduce the heat to a simmer. Cook 15 minutes, stirring occasionally. Stir in the black beans. Simmer, uncovered, 10 minutes. Fork out insides into a giant cassarole dish. Add cottage cheese, half of the mozzerella and parmesan, sauce. Mix it until it looks like it's name. Top with remaining cheese. Bake at 350 for 45 minutes.
