The main reason is that colored lighting, or environmental lighting of any kind is very processor intensive. There are some games that use shortcuts like sector lighting, such as in Wipeout XL. Blood is just a gimmick overly used in the gaming industry to draw more attention... they dont focus on what makes a game good.. Take Rise of the Triad for instance (remember that game)... the engine sucks even tho it came out more than a year after doom did, maybe more... the ceiling and floor heights were unchangable, and the game licked! But you shoot a guy with a missle and you see a disembodied eyeball fly past your screen...
